Long maceration of sauvignon blanc. Picked ripe and unsulphured, the grapes are destemmed and lightly crushed at vatting.
The fermentation temperature is between 18 and 20 degrees Celsius, well above a traditional sauvignon blanc fermentation in liquid phase. The marc cap, made up of the grape skins, is frequently immersed until the desired structure of the wine is obtained (pleasant expression of the bitters).
A vat is worked differently with a contribution of oxygen as of the crushing in order to develop specifically the exotic flavours. As with traditional white wine making, the lees are regularly suspended at the end of alcoholic fermentation and during maturation, in order to build the mid–palate.
Tasting notes
Exotic notes of fresh pineapple and lychee. In the mouth, the notes of blood orange, citrus zests and candied citrus fruits are particularly expressive. The attack is lively and refreshing.
The fatness of the mid–palate accompanies for a long time the bitters which are never dominant. The finish remains lively, carried by a beautiful acidity and notes of greencardamom that blend delightfully with wild mint.

Grenache – Sauvignon Blanc

WINEMAKING
Tasting of the grapes to decide on harvesting time. Maceration on the skins for a few hours. Racking. Addition of yeast. Alcoholic fermentation at controlled temperatures (16 – 18 C°).
Malolactic fermentation for a part. Aged on fine lees for 2 months.
tasting notes
Pale yellow robe, fresh citrus, granny apple and pear aromas appear on the nose. Juicy acidity with a good volume on the palate. The finish is fresh and saline.

Guacamole, beetroot and walnut salad, veggie lasagna.

WINEMAKING
Manual selection of bunches and berries. Once the grapes are in the egg we start fermentation immediately with selected yeasts to avoid oxidation. Alcoholic and malolactic fermentation takes place in 25 days, with very gentle pumping over during the first week.
Once fermentation is finished, we rack and press the wine. In this line we always privilege freshness and fruit over extraction.
tasting notes
The color is deep and intense cherry red with purple reflections. The nose is given by the
côt, which has a great freshness reminiscent of red berries and, above all, a floral
component that is very present in the Los Chacayes area, along with the Violet. The
subtlety of its tannins inspires both sweetness and concentration. The wood does not interfere with the aromatic ex– pression of the wine but contributes to its volume
and roundness. The natural acidity of our Terruño de Los Chacayes gives this wine its elegance and depth.

Domaine les Fumées Blanches Sauvignon Blanc 2022
A premium cuvée 100% Sauvignon Blanc made up of two terroirs: limestone-clay giving the wine lemon and exotic fruit aromas and a fullness on the palate, whilst boulbènes sand-clay soils offer herbaceous and lime notes with a taut touch.
WINEMAKING
The grapes are pressed, and the juice undergoes active maceration on the lees for five days at 5 to 8°C. This helps to release and preserve as many of the aroma precursors in the skins as possible, which will later reveal the typical aromas of the Sauvignon Blanc grape when they come in contact with native yeast. Ageing on fine lees for 3 months in concrete eggs.
tasting notes
Bright pale–yellow color with some green nuances. The nose first reveals notes of yellow lemon, lychee and fresh almond, followed by smoky nuances. Elegant palate, with a nice balance between a soft attack of fresh fruits and a mineral, long and tense finish with grapefruit notes.
